Salad; Organic mixed greens with fresh vegetables, julienne carrots, cucumber sticks, vine ripened tomato, garnished with sweet potato chips, manchego cheese and a lime-basil vinaigrette.
Roasted chicken curry with sauteed vegetables, peppers, squash, onions, mushrooms and eggplant over bhutanese red rice garnished with fresh basil and tomato. A vegetarian version of the curry will be available as well.
Dessert; Lemon bars, chocolate truffles, macaroons or if you would like a plated option maybe a ginger cake with whipped cream and caramel sauce.
Salad; Spinach salad with roasted apples, gorgonzola, roasted pistachio, fresh raspberry and a raspberry vinaigrette.
Entree; Beef stew with; pearl onions, crimini mushrooms, carrots, celery root over a bed of horseradish mashed potato and topped with paprika toasted croutons.
Dessert; Chocolate brownies with walnuts, caramel bars, oatmeal raisin cookies
A plated option could be tiramisu with frangelico syrup.
Salad; Romaine lettuce tossed with shaved radishes, julienne peppers, picked cilantro, toasted pine nuts, mexican cotija cheese and a cumin vinaigrette.
Entree; Homestyle buffalo chile served on top of jalapeno-cheddar corn bread and condiments; smoked cheddar cheese, sour cream, jalapeno salsa, diced onion and tortillas on the side.
Dessert; Macadamia cookies, raspberry cheesecake bars, chocolate covered cream puffs.A plated option could be key lime pie with whipped cream and blueberry sauce.
All lunches will have coffee service, lemonade and iced tea.
